Café Touba is a spicy, invigorating coffee drink from Senegal that's made with roasted coffee beans and a blend of spices:
  • Spices
The key ingredient is grains of Selim, also known as Guinea pepper, djar, Kani pepper, or Kili pepper. The beans are also sometimes mixed with cloves.
  • Flavor
The result is a bold, earthy, and spicy flavor with a hint of sweetness and a robust peppery, anise taste. Some say it has notes of cardamom and balsamic vinegar.
  • Preparation
The coffee is prepared similarly to drip coffee, using a filter. It's often served black, but sugar is commonly added to balance out the strong flavor.
  • Health
The spices in Café Touba have antioxidant and anti-inflammatory properties. In Senegal, it's sometimes used as a medicinal drink.
  • History
Café Touba was originally a beverage unique to the Mouride Brotherhood, but it's now a common part of Senegalese culture. It's often sold in capsule or single-serve coffee bag form, but it's also commonly prepared by street food vendors and restaurants.
